Risotto: leftovers recipes!

What if today you use the meal you've left in the previous meal? The leftover can always be used to make great dishes, just change their aspect, add some ingredients and...there you have it! A completely different dish! Often it is great for us, overall when we have no time to prepare a dish right from the start. We'll keep on posting ideas, but today we'll focus on our risotto-themed articles, we've already talked about how to choose the right kind of rice, or how to cook a great saffron risotto, but today we'll deal with what to do with the delicious risotto you haven't finished.
  
It is worth mentioning that the risotto is to be eaten when served for the first time, if you reheat it, well, it will lose all its charme, and it may result too thick, even if some loves it this way...
We use the risotto in thousands recipes, and often we cook too much on purpose, to have some risotto left for our creations! Today we'll bring you just some of these ideas.


Rice is something very hard to precisely measure into portions, and risotto is no exception to that, so, when you have distributed all the risotto to your guests and you've still half of the pot full of risotto, do not despair! Put it in a tupperware, in a dish, in whatever you like most and put it into the fridge covered with a plastic wrap. In this way it will densify, thanks to the starch and the characteristic creaminess and it will be easy to work with.

In the Italian gastronomy, we find many dishes with rice that is made up as a croquette, or a croquetas. For instance, we can find the famous sicilian "arancine", or the roman "supplì", two dishes that we'll meet in another occasion.

Ingredients:


  • The leftover of the risotto we prepared "yesterday" that we've kept in our fridge.
  • Mozzarella fresh cheese, Edam cheese or similar cheeses, we need it to melt.
  • Whatever we like, this is one of those recipes I call "bottom of the fridge"
  • Breadcrumbs and eggs
  • Oil to fry them

You can use your rice to make a croquette, or a croqueta in Spanish. Just use the rice you've left in the fridge overnight (or anyway enough time to have it densified a bit). Wet your hands with  some oil in order to be easier for us to work the rice and just take a portion of risotto and put in its interior a portion of mozzarella or a "filante" cheese. You can add peas, carrots bites, pieces of ham, prosciutto or jamon...come on, just take all these ingredients you find at the bottom of your fridge...or even outside of it! Of course, you had better to check what ingredients there were in the original risotto, for instance, our risotto was with shrimps and tuna, so we decided to add just some cheese and it was great!
Just shape the risotto into a sphere, or a football, just like a croquette. Pass it through beated eggs, then through breadcrumbs (you can do this twice in order to have a crispier crust), fry them and...there you have them!

You can freeze them too! That option is perfect to have them ready for other days...or even for days when we're in a hurry, why not? ;)

These croquettes can also be easily transformed into...meatballs! You just have to toss them in a saucy super tasty pot after you've fried them!

Crispy tart

In this other recipe, you just have to add a drizzle of oil in a pan and toss there the risotto, flat it with a spoon or a spatula in order to thin it. Toast it for just some minutes, and then turn it upside down, just like you would like with a frittata or a Spanish tortilla, and toast it on the other side.

It will result a super crispy and super tasty salted tart! Everybody loves it, from the kids to the grandpas! You can now cut it into different portions and you can even eat it with your hands...and there's nothing better than eat tasty food with hands!

Another idea it is to add some cheese, tomato sauce and/or other ingredients as a topping and use the "tart" as a base for our..uhm...pizza...sorta!

You can also make some hamburger-shaped risotto leftovers, too! Just put it over a grill...I assure you that in this way kids will enjoy a lot eating things that otherwise wouldn't even think to eat. Just hide them inside your "hamburger"!

Ok, another idea we had is to make a Spanish tortilla with our risotto...just beat eggs and add the rice, or even as a filling for salted crepe, or crespelle, and there are many many ideas yet to share, I assure you!

Use your imagination, the important thing is avoid that our risotto leftovers will ever finish into garbage!

Risotto: ¿qué hacer si nos sobra ?

Hoy te proponemos no tirar nada! las "sobras" de comida siempre se pueden aprovechar y dándole otro aspecto, o añadiendo algún ingrediente que otro, puedes conseguir una comida diferente ;), que a menudo viene muy bien, ya sea por falta de tiempo, ahorro o simplemente por no tirar la comida! Os iremos dando ideas al respecto pero, como no podía ser menos, siguiendo nuestra serie de artículos sobre el risotto, donde hemos hablado sobre cómo elegir el arroz a usar o cómo hacer un buen risotto al azafrán,  hoy te damos algunas ideas de qué hacer cuando te sobra este plato delicioso.

Si es verdad que el risotto se come recién hecho, porque luego pierde todo su "encanto" y recalentado, aunque hay quien lo hace, para nuestro parecer no es buena idea, queda pastoso y sin gracia. Nosotros lo aprovechamos de mil maneras, de hecho solemos hacer de más para que sobre a posta. Hoy te proponemos tan sólo algunas ideas para cuando os sobra risotto! ;)

A quién no le ha pasado, el arroz suele ser siempre de esos platos que suele costarnos dar con la cantidad justa para nuestro comensales, y el risotto no es una excepción, así que cuando termines de repartirlo y veas que te queda aún en el caldero, no desesperes! ponlo en un tupper, fuente, plato o bandeja, extiéndelo, y resérvalo en la nevera tapado con un papel film, hasta el día siguiente, o cuando tengas tiempo. De esta manera se adensará, gracias al almidón y la cremosidad característica y será muy fácil de manejar para cualquier tipo de preparación posterior.


Croquetas de arroz

En la gastronomía italiana nos encontramos diversas preparaciones a base de arroz, a modo de "croqueta" sin llegar a serlo. Así podemos encontrar los famosos "arancini" sicilianos o los "supplì" romanos, de los cuales ya hablaremos en otra ocasión.

Ingredientes:


  • El risotto sobrante de " ayer" que tenemos en la nevera
  • Queso mozzarella, Edam o similares ( un queso que se funda, al gusto)
  • Lo que nos apetezca! jaja ya que es una receta de esas que yo llamo "de fondo de nevera"* ;
  • Pan rallado y huevo ( para empanar)
  • Aceite para freír

A modo de croqueta aprovecharemos nuestro arroz, que lleva toda la noche en la nevera ( o el tiempo suficiente para que se hay adensado). Nos untamos las manos con un poco de aceite para que sea más fácil trabajar la "masa" y cogemos una porción de arroz, en su interior podemos poner un queso tipo mozzarella u otro tipo de queso que funda bien. También podemos añadir guisantes, trocitos de zanahoria, taquitos de jamón cocido o serrano... vamos, esos ingredientes* que encuentres dentro de la nevera (o fuera de ella) al gusto, aunque claro está, tendremos que ver de qué es nuestro risotto sobrante pues por ejemplo, en el caso de las croquetas de la foto, el risotto era de atún y gambas, así que simplemente le añadimos queso y quedaron geniales. Así, hacemos una bolita o damos la típica forma de croqueta. Pasamos por huevo batido, seguidamente por pan rallado (podemos hacer un doble empanado si queremos una corteza más crujiente), freímos y listo!
Además también podemos congelarlas! para cuando nos apetezcan otro día, o para cuando vayamos con prisas ;)

Estas "croquetas" también podemos disfrazarlas de "albóndigas", si seguimos el proceso igual que os hemos contado hasta ahora, pero una vez fritas las introducimos en un caldero a cocinarse en una rica salsa.


Torta crujiente

En esta otra forma, solamente tenemos que poner unas gotitas de aceite en una sartén e introducir el arroz, aplastarlo bien con con el verso de una cuchara o una espátula, para que quede fino. Tostarlo unos minutos y girarla como si de una tortilla se tratase, y tostarlo por el otro lado. 

Nos quedará una torta crujiente y deliciosa! que gusta a grandes y pequeños. Podemos cortarla en porciones y comerla incluso con las manos! ( no hay nada mejor que usar las manos jeje).

Otra idea sería añadirle queso, tomate, salsa u otro ingrediente y utilizar esta " torta" de base, como si fuese una pizza o un creps.

También podemos darle a nuestro arroz forma de hamburguesa, y asarla. Os aseguro que a los niños les encanta y es una manera de introducirles a " escondidas" dentro del arroz cosas que no suelan querer comer.

Otras ideas que se nos han ocurrido, es hacer una tortilla de risotto, batiendo el huevo y añadiéndole el arroz. O también nos sirve como relleno de un creps salado, Y un sinfín de utilidades más!

Échale imaginación, el caso es que nuestro risotto no acabe nunca en el cubo de la basura :D

La ricetta della Croquetas spagnole

Le crocchette sono un simbolo della gastronomia spagnola, e rappresentano una specialità tipica realizzata con i sapori più autentici e veraci della cucina iberica. Non ci immaginiamo di andare in un posto di tapas senza che nel menù non vi siano anche le onnipresenti crocchette. Le patate sono un alimento molto diffuso nella gastronomia spagnola, così come il jamon, e in molte ricette di crocchette spagnole questi due ingredienti si incontrano. Eppure le sue origini forse non sarebbero spagnole. La testimonianza storica più antica delle crocchette risale infatti al 1691 in Francia, quando il cuoco di corte di Luigi XIV lascia per iscritta la prima ricetta della deliziosa pietanza. A sostegno di questo dato apportiamo il fatto che le croquetas sono fatte anche con la salsa bechamel, una salsa di origine italiana tipica anche della cucina francese. Non sappiamo se il cuoco in questione abbia preso ispirazione da una precedente ricetta spagnola, ma sta di fatto che in Spagna le crocchette hanno avuto uno sviluppo incredibilmente maggiore.

La prima fonte storica di crocchette spagnole si trova nel libro del 1867 " El cocinero español y la perfecta cocinera", pubblicato a Malaga. Forse questa fonte è però eccessivamente tarda, e non dubitiamo che, di madre in madre, la ricetta  tradizionale di crocchette possa essersi originata svariati secoli prima.
Il nome invece non lascia spazio a dubbi, deriva dalla parola francese croquir e significa "scrocchiare", essere croccante. In seguito con il regno Borbonico nel sud Italia arrivò anche nel Regno delle due Sicilie, dove si trasformò in quella che oggi chiamiamo crocchè. la differenza tra le crocchè e le crocchette è che le prime si fanno con patate e uova, mentre le seconde con farina e latte. Dalle crocchè in Sicilia poi avranno origine anche le arancine.

Oggi  vi parleremo delle crocchette con Jamon Iberico, una ricetta del famoso chef spagnolo Alberto Chicote, il quale ha pubblicato la sua ricetta direttamente su Twitter. Noi abbiamo fatto qualche ritocco qua e là, soprattutto per quanto riguarda le quantità, ma in pratica la ricetta è la stessa, saporita e cremosa. Sinceramente questa è la prima volta che metto la panna per fare la massa delle crocchette, ma è vero che ciò le rende molto cremose e morbide. Vi diremo in altre occasioni altre varianti di questa straordinaria ricetta.
Vediamola subito!

Ingredienti:


  • 670 ml di latte
  • 330 ml circa di panna da cucina
  • 95 g.di farina (ho usato metà farina normale e metà integrale)
  • 75 ml di olio circa (La ricetta di Chicote usa burro, ma io preferisco l'olio)
  • 1 cipolla grande
  • 100 g. di Jamon Iberico 
  • osso di prosciutto (facoltativo=
  • Sale (al gusto)
  • pepe nero (al gusto)
  • una spolverata di noce moscata
  • Per l'impanatura, 2 uova, farina e pane sbriciolato

Preparazione:

1º- In una pentola mettiamo il latte e la panna a riscaldarsi, nel caso che abbiamo con noi l'osso di Jamon possiamo inserirlo in questa fase, di modo che riscaldandosi il liquido prenda sapore. Quando il tutto inizia a bollire, abbassiamo il fuoco e lo lasciamo cuicere lentamente.

2º- In una padella antiaderente mettiamo dell'olio a fuoco medio-basso. Tagliamo la cipolla alla brunoise, o in piccole e sottili fette, e la lasciamo soffriggere. A questo punto mettiamo un po' di sale per velocizzare il processo.  Quando la cipolla risulterà trasparente, aggiungiamo il Jamon sminuzzato e rigiriamo il tutto.

3º- Aggiungiamo la farina e rigiriamo per 10 minuti circa, a fuoco basso per cuocere la farina, e passato questo tempo aggiungiamo poco a poco il mix di latte e di panna (ovviamente senza l'osso di jamon), senza smettere di rigirare per evitare che si formino i fastidiosi grumetti. Rigireremo il tutto per 10 minuti circa, o fin quando vedremo la massa ben uniforme. Aggiungiamo sale, pepe e la noce moscata e poi rigiriamo per altri 10 minuti circa, o fin quando vedremo che la massa smette di essere appiccicosa e non si attacca più ai lati della padella.


4º- Una volta concluso, passiamo la massa a un piatto fondo perchè si possa raffreddare, e copriamo con la pellicola trasparente . La pellicola dovrà toccare la massa per far sì che non si formi una crosta quando questa si raffredda. Lo lasciamo nel frigo per un paio d'ore o per la notte se lo facciamo da un giorno all'altro.

5º- Prendiamo tre piatti e in uno mettiamo farina, in un altro uova sbattute e in un altro ancora pane sbriciolato. Facciamo delle palline con la massa della dimensione che preferiamo e le passiamo prima per la farina, poi per l'uovo sbattuto e infine per il pane. Adesso friggetele in olio molto caldo. 



Le crocchette le possiamo congelare se non le mangiamo subito. Il mio trucco è quello di metterle in una teglia ben separate l'una dall'altra e le mettiamo a congelare per un'oretta circa. Poi, una volta congelate, le mettiamo in un sacchetto di plastica per congelare o in un Tupperware. Così facendo non si attaccheranno l'una all'altra quando di congeleranno, rendendo impossibile separarle poi quando le andremo a cucinare!

Croquetas de jamón ibérico ( receta adaptada del chef Alberto Chicote)



Las croquetas son un símbolo de la gastronomía española y representan una especialidad típica realizada con los más variados ingredientes, incluyendo los sabores más auténticos de la cocina ibérica, como el jamón. No podemos imaginarnos ir a los bares de tapas tan típicos de España, y ver un menú en el que no se incluyan las omnipresentes croquetas. Las patatas son un alimento muy difundido en la gastronomía española y de hecho muchas versiones de las croquetas la incluyen en su masa, aunque quizás las más comunes se encuentran hechas básicamente de una bechamel acompañada de ingredientes de lo más variado, pues la croquetas se pueden hacer de todos los sabores que podamos pensar, todo lo que se coma prácticamente tiene cabida dentro de una croqueta.

Sin embargo, a pesar de ser un producto tan extendido en el país, no es de origen español, aunque sin duda ha tenido un gran éxito. El testimonio histórico más antiguo de las croquetas procede del país vecino Francia, en el año 1691, cuando el cocinero de la corte del Luis XIV deja por escrito la primera receta de este delicioso manjar que se tiene constancia. No sabemos si el cocinero en cuestión cogió inspiración de alguna receta española, pero es un hecho que en el país ibérico ha tenido un desarrollo increíblemente mayor, aunque podemos encontrar versiones en diferentes países.

La primera fuente histórica de las croquetas españolas se encuentra en el libro del año 1867 " El cocinero español y la perfecta cocinera", publicado en Málaga. Quizás esta fuente es excesivamente tardía, y no dudamos de que las recetas hayan pasado de abuelas a madres, de boca a boca y de generación en generación de manera tradicional, pudiendo ser originada siglos antes.

En cuanto al nombre de croqueta, no deja lugar a dudas de su procedencia, pues deriva de la palabra francesa croquir, que se refiere a lo crujiente. En Italia las croquetas llegan de manos del reino Borbónico en el sud de Italia llegando tal reino de las Dos Sicilias, donde la croqueta se transformó en la que hoy en día conocemos como "crocchè", aunque estás últimas suelen basar su masa siempre en la patata. De las crocchè nacieron en Sicilia posteriormente los famoso "arancini."

Hoy os traemos unas croquetas de jamón ibérico, receta del famoso chef Alberto Chicote, el cual personalmente dio la receta en su cuenta de Twitter hace unos meses. Nosotros le hemos hecho unas pequeñas variaciones, sobretodo en las cantidades, pero en sustancia es lo mismo y están riquísimas, muy cremosas. Personalmente es la primera vez que introduzco nata al hacer masa de croquetas pero ésta le aporta cremosidad. Ya os daremos muchas otras recetas y versiones de este rico bocado. 
Vamos con la receta! 

Ingredientes:

  • 670 ml de leche
  • 330 ml aproximadamente de nata para cocinar
  • 95 g. de harina ( yo puse mitad integral y mitad normal)
  • 75 ml de aceite de oliva aprox. ( la receta original incluye también mantequilla pero yo no la utilicé)
  • 1 cebolla grande
  • 100 g. de jamón ibérico
  • hueso de jamón ( opcional)
  • Sal (al gusto)
  • pimienta negra (al gusto)
  • Una pizca de nuez moscada
  • Para el rebozado: 2 huevos, harina y pan rallado.

Preparación:

1º- En un caldero, ponemos la leche junto con la nata a calentar, en el caso de que tengamos el hueso de jamón, lo introduciremos también, de manera que al calentarse la mezcla vaya cogiendo sabor al jamón. Cuando empiece a hervir, bajaremos el fuego sin retirarlo de éste, y continuamos cocinando.

2º- En una sartén grande anti adherente, o una olla, introducimos el aceite a fuego medio- bajo. Picamos la cebolla finamente ( brunoise), y la pochamos. En este punto añadimos la sal para ayudar al proceso de pochado. Cuando esté transparente, añadimos el jamón picado en trocitos pequeños, y rehogamos todo junto.

3º- Añadimos la harina y removemos durante unos 10 minutos aproximadamente, a fuego bajo para cocinar un poco la harina, pasado este tiempo, añadimos poco a poco la mezcla de la leche y la nata ( sin el hueso de jamón claro!), sin dejar de remover para evitar la formación de grumos. Salpimentamos al gusto y añadimos la nuez moscada. Estaremos removiendo unos 10 minutos más, o cuando veamos que la masa está bien ligada y no se pega a las paredes del recipiente donde las estamos preparando.



4º- Una vez terminado, pasamos la masa a una fuente para que se enfrié, y tapamos con papel film. El papel deberá tocar la masa para conseguir que no forme corteza al enfriarse. Lo meteremos en la nevera un par de horas o podemos dejarlo de un día para el otro.

5º- Cogemos tres platos y los preparamos uno con los huevos batidos, otro con harina y otro con pan rallado. Formamos bolitas del tamaño que deseemos, las pasamos primero por harina, seguidamente por el huevo batido y finalmente por pan rallado. Freír en aceite bien caliente.




Las croquetas podemos congelarlas si no las vamos a usar, para ello un truco es ponerlas en una bandeja o plato colocadas separadamente y las introducimos en el congelador una hora más o menos, o hasta que estén congeladas. Luego, una vez congeladas, las quitamos del plato o bandeja, y las guardamos en bolsas de congelación o tuppers. De esta manera no se nos pegarán unas a otras al congelarse, constandonos la vida separarlas cuando las queramos usar!.

the Spanish Croquetas recipe



The Croquetas are a symbol of Spanish gastronomy and represents a dish prepared with a speciality of iberian cuisine, like Jamon Serrano. Wa cannot think of going in a Spanish bar without the omnipresent croquetas. Potatoes are really widespread in spanish gastronomy, and in many versions potatoes are included in the mixture, even if the vast majority is made with a bechamel sauce together with a large variety of possible ingredients, everything's fine within a croqueta.

But even if the croquettes, or croquetas, are now a typical spanish dish, historical documents seems to show that the origins of this dish are not in Spain, but in France. The oldest document is from year 1691, where we can find the recipe of a croquette from the Royal chef of Louis XIV. We do not know if the cook draw inspiration from a previous traditional or oral recipe from Spain, but we can see that nowadays the croquetas from Spain are really popular and so they somehow gained success crossing the borders. We can see nowadays different versions in many Countries.

The first historical documents about spanish croquetas is to be found in a year 1867 book titled "El cocinero español y la perfecta cocinera" ( the spanish cook and the perfect lady in the kitchen), published in Malaga. We find this book to be a little bit too late to be realistically the first mention of spanish croquetas, and we are pretty sure that generation after generation, mother to daughter, the authentic & traditional spanish croquetas recipe have been invented many century earlier its formal publication.

If the origin of the recipe may be somehow controversial, the origin of the name is easy to relate to the french word "croquir", that is being crispy. In Italy, the croquetas, or croquettes, arrives through the Bourbon dinasty to Southern Italy, to the Regno delle Due Sicilie, where the croquettes were stolen from the hands of the Monzù (the french chefs of the Bourbon royal court) and transformed the tasty "crocchè", based on a potatoes and egg mixture. Later, in Sicily from the Crocchè were created the famous "arancini". A pretty glorious history isn't it?



Today we will bring you the recipe for a croquetas made up with Jamon Iberico, a dish invented by the spanish chef Alberto Chicote, who personally published his own recipe through Twitter some months ago. We changed a little bit here & there, overall for what concerns the quantities, but at the end the result is almost the same, creamy & super tasty. This is actually the first time I use heavy cream for croquetas, we'll give you many other croquetas recipe in the future.
Let's go with the recipe!

Ingredients:
  • 670 ml if milk
  • 330 ml approx. of heavy cream
  • 95 g.of flour (I used half whole-wheat, half normal flour)
  • 75 ml of olive oil aprox. (the original recipe uses butter, but I don't)
  • 1 big onion
  • 100 g. of Jamon Iberico
  • Jamon bone (optional, but it will add much more taste to it!)
  • Salt (the quantity you want)
  • black pepper (to taste)
  • A little bit of nutmeg
  • For the battering: 2 eggs, flour & breadcrumbs

Preparation:

1º-  In a pot, we put the milk and the heavy cream together to warm a little bit. If we have the Jamon bone, put it in the pot now, it will add a lot of flavour. When the liquid starts to boil, we low the heat and keep on cooking it a little bit more.

2º- in an anti-adherent pan we pour a drizzle of oil and we put the heat on medium-low. We cut the onion à là Brunoise, or in thin slices, and we put it to fry a little bit. At this point we will add the salt to speed up the frying. When the onion starts to become transparent, we add the Jamon Serrano we previously cut in small pieces and we stir it all together for a while.

3º- We add the flour and we stir for about 10 minutes, on low heat to cook the flour, and after that we pour into the pan the mixture of the milk and the heavy cream (do not pour you jamon bone, be careful!) and keep stirring in order to avoid the creation of bulks. A little bit of salt & pepper to taste and also a little bit of zested nutmeg too! We will stir for other 10 minutes or so, or until we see the dough well mixed, not sticky and we see all ingredients well incorporated.


4º- Once we concluded the previous step, we put the dough in a platter so to let it cool, and we cover it with plastic wrap. We want the plastic wrap to touch the dough, so to avoid the forming of a crust when cooling. We pop it into the fridge for about two hours or we can let it there overnight.

5º- We prepare three dishes, and we put flour in the first, beated eggs in the second and breadcrumbs in the last one. We create little balls with the dough of the size we prefer, and we dip the balls first in the flour, then in the beated eggs and then again in the breacrumbs, all in sequence. Fry it in very hot oil.



We can freeze the croquetas we don't eat them right away. To do so, a trick is to put them in a tray each one separated from the others and we put them in the freezer for about an hour, or until they are completely freezed. Then, once freezed, we remove them from the tray and we put them into freeze bags or Tupperwares. In this way they won't stick to each other when they will freeze, and will be easy to get them ready to eat!
