La torta Vilana, dalle Isole Canarie


Nel mese di maggio si festeggia il giorno delle Isole Canarie, e per celebrarlo inizieremo a condividere con voi delle ricette regionali e tradizionali della deliziosa gastronomia di queso arcipelago.


Oggi iniziamo con un dolce tradizionale dell'isola de La Gomera, la torta Vilana! si chiama così perchè prende il nome dal recipiente in cui si cuoce, che si chiama per l'appunto vilana o milana, ed è rettangolare e spesso metallico. Questo dolce è simile a un plum cake, ma la sua peculiarità è che porta nella sua massa come ingrediente principale le patate, oltre che le mandorle e l'uvetta passa. Le isole Canarie, come abbiamo già detto in altri articoli, hanno una varietà di patate davvero infinita, mentre le mandorle sono un frutto estremamente presente nei campi delle isole, e pertanto sono assai utilizzate sia nella pasticceria che nella gastronomia delle isole.

La torta Vilana è un tipico dolce tradizionale, con un sapore e una consistenza assai soffice, che possiamo trovare in qualunque festa Canaria, in fiere dell'artigianato, nelle feste delle scuole, nelle riunioni famigliari, nelle romerias...è davvero delizioso, ma è anche particolarmente facile da fare! Oggi condividerò con voi la ricetta della torta Vilana di mia mamma!
ingredienti

Ingredienti:
  • 250 g. di farina
  • 200 g. di zuccher (o quanto ne vorrete) 
  • 500 g. di patate
  • 30 g. di lievito tipo Royal
  • 6 uova
  • 150 g. di burro
  • 200 g. di mandorle
  • 200 g. di uva passa
  • 1 cucchiaiata di cannella
  • 1 buccia grattata di limone


Preparazione:

1º- Peliamo le patate e le mettiamo a cuocere. Una volta cotte, le trituriamo con una forchetta o un trituratore.

2º- In una ciotola, mettiamo le patate triturate con lo zucchero, il burro, le uova, l'uva passa e mescoliamo il tutto per bene.
3º. Aggiungiamo la farina (setacciata), con il lievito, la cannella, le mandorle (che abbiamo pelato in precedenza e sminuzzato in pezzi non troppo piccoli), e la buccia di limone grattata. Mescoliamo bene il tutto.

4º- Cospargiamo di grasso (burro) una teglia rettangolare e la spolveriamo con farina, affinchè la nostra torta non si incolli al fondo, e introduciamo la massa, decorando la superficie con mandorle intere secondo le nostre preferenze.

5º- Cuociamo in un forno preriscaldato a 150°C per circa un'ora. Staremo molto attenti alla cottura, dato che ogni forno è un mondo a parte. In questo modo vedremo che se si sta dorando troppo la superficie, potremo coprirla con carta argentata o carta da forno e continuare tranquillamente la cottura. Per verificare che è ormai pronto, usate un ago da cucina o un coltello e inseritelo nella torta: se ne uscirà pulito, la vostra torta è pronta!




6º- Lasciate riposare la vostra torta nella teglia finchè non sarà tiepida, e poi terminate il raffreddamento della stessa su una gratella e cercate (se riuscite!) di non mangiarla finchè non sarà completamente fredda!

Canary Island's Vilana Cake


In the month of May we celebrate the day of Canary Islands, and therefore we want to share with you regional recipes from the rich gastronomy of these islands.

Today we start with a traditional sweet dish from the Gomera Island, the Vilana Cake!
It is called vilana because it is named after the rectangular tinpot called vilana or milana. This sweet dish looks like a traditional cake, but its peculiarity is that its dough has potatoes as the main ingredient, and in addition almonds and currants. Canary islands have a huge variety of potatoes, as we previously mentioned in other posts, and the almonds and dried fruits are very presents in the islands, and therefore those products are often used in the gastronomy of Canary islands.

The vilana cake is a traditional cake with a very smooth taste and texture that we can find in every typical Canary feast, like feasts of artisans, school's feasts, family celebrations, romerias...this delicious dish is also so easy to do! Today I bring to you the vilana recipe of my mother.

ingredients

Ingredients:
  • 250 g.of flour
  • 200 g. of sugar (or according to your taste) 
  • 500 g. of potatoes
  • 30 g.  of royal yeast
  • 6 eggs
  • 150 g. of butter
  • 200 g. of almonds
  • 200 g. of currants
  • 1 spoonful of cinnamon
  • 1 lemon zest


Preparation:

1º- We peel the potatoes and we put them to cook. Once they're ready, we mash them with a fork.
2º- In a bowl, we put the mashed potatoes with sugar, the butter, the eggs, the cinnamon and we mix it all well.
3º. Add the sifted flour, the yeast, the almonds (that we previously peeled and minced in not so small pieces), the currant and the lemon zest. Mix it all well.
4º-  Put some butter on the interiors of a rectangular baking pan in order to not let stick our cake to the pan and we put our dough inside of it, and decorate the surface with almonds (no need to peel or mince them here).

5º- Bake it in a preheated oven at 150° Celsius for about an hour. We will keep an eye to the oven every time, because as we all know every oven it's a world of its own. If we see that it's getting too much golden brown on the surface, we can cover it with an alluminium foil or a baking sheet, and we'll just keep baking. To be sure that our cake is ready, we'll put a kitchen needle of a knife inside of the cake, and if it get out of it clean, then the cake's ready!



6º- Let it cool until it's warm, then put it out of the baking pan, and let it cool completely on a rack, and if you can, try to resist the urge to eat it until it's cool!
