The history of Moka coffee

In our houses there are many objects that we simply consider that have been there since forever. One iconic thing that many of us (at least in Europe, overall in southern Europe) will surely have is the moka coffee pot. We see it and we immediately link it with coffee. But this great invention, simple just like every other great invention, is no more than eighy years old! It is considered, along with Vespa, Fiat 500 and Ferrari cars one of the most important and universal product of Italian industrial design. It is exposed in Milan's La Triennale Design Museum and in New York's MoMa. But let's get back to see the full story!

Alfonso Bialetti, who worked in France in the early 1900s in a foundry, learning many important techniques, opened in 1919 an industry in his native Piedmont region. In this industry he produced objects in iron and alluminium. In 1933 he had the idea that revolutioned his life and the whole community of coffee lovers: creating coffee in every home through the steam of boling water. The name he choose, "moka", was inspired by the Mokha, in Yemen, in the area where the coffee has been cultivated for centuries. This lead to a revolution in drinking coffee: it became a drink very easy to obtain everywhere, and this pleasure was no longer confined to the higher classes in the cafes. It "democratized" the black hot drink. In Italy and in many other countries like Spain coffee in a moka pot is somewhat a ritual involving families and friends eating together.



The espresso machine, invented in 1901 by Luigi Bezzera, now to be found in every coffee worldwide, of which we will talk in another occasion, is just so different in concept and in taste. There are two main way of thinking in the big big world of coffee lovers: those who thinks that the true "caffè" is the one made with Moka (let's say them the Bialettians) and those who thinks that true coffee is only the one made with espresso machine (the Bezzerians). Choose your side, or, as we do, enjoy both!

Many thinkers, like frenchmen Honoré de Balzac, links the invention of agitated the crowd. It surely is no good exaggerating in caffeine, but a small ritual, twice a day, is really pleasing. The very first home coffee pot was actually not the Moka, anyway. The caffettiera napoletana (we'll talk about it, do not worry!) was created in 1819 in Naples, but in this way, even if the coffee is really delicious, the process is considerably longer.

It is important that, even if many industries (like for example the elegant Alessi) creates interesting and stylish coffee pots, the licence is still owned by Bialetti Industrie, and them only can produce the original octagonal Moka. Check it out, other version have a different number of sides, and is never octagonal! Mokas are still nowadays mainly produced in Italy. From 1933 to 1946 the Bialetti industrie produced some 70000 coffee pots in an year. From 1946 on, when Alfonso Bialetti left the charge to his son Renato, the company reached one million coffee pots mark in an year. With the post war European growth, the Moka became easily a sign of La Dolce Vita, a relaxed and laid back way of thinking about life, enjoying a good cup of caffè surrounded with good friends. The "man with mustache" (l'omino coi baffi) campaign started in 1953, making Bialetti a worldwide recognizable brand. The mustached man represented was Alfonso Bialetti himself.

And now some suggestion about how to obtain a good cafè with your moka!

-First of all, pour the water in the buttom chamber of the moka pot. Do not let the water pass the valve: if the water is too high and touch the coffee basket, it would create a sort of cap that would not let the steam circulate freely.

-Put the coffee powder in the middle basket and press it a little bit, but it has not to be too pressed, otherwise the steam of the boiling water will not flow. This is a main difference between the moka and the espresso machine, that has a higher pressure and needs the coffee powder to be very dense.

-Put the coffee on low-middle heat. Do not put the coffee pot on high heat, the coffee it is obtained with a process known as percolation, and if the steam is too strong because of high heat, the coffee you'll obtain with get only partially the complete flavours that the coffee powder has.

-After some minutes, you'll hear your moka bubble. There you have it! Your coffee is ready! Pour it into a small cup and get back to the table with your friends!

-If you see that the coffee you obtained is not enough according to the water you put inside the bottom chamber, you might either have wet your coffee ground in the basket or it might be just time to substitute your filter. You can put a little bit of cold water in a pot beside the Moka and put for some seconds the bottom of Moka pot in the water to cool it down a little bit before putting the moka back on fire. It will help extracting all the stream.

Historia de la cafetera moka


En nuestras casas hay muchas cosas u objetos que damos por descontado es decir, que no hay casa en la falte y sin duda uno de estos objetos es nuestra vieja cafetera moka ( o cafetera italiana), la cual miramos y nos viene a la mente enseguida el aroma de un buen café para empezar el día, pero este gran invento, simple y genial que nos parece que siempre haya existido no tiene más que ochenta años! Es considerada hoy, junto a la Vespa, la Fiat 500 o la Ferrari, uno de los objetos icónicos más representativos del design italiano. La moka se encuentra expuesta en grandes museos como el MoMa de Nueva York o la Triennale de Milán. Pero veamos como nace!

Alfonso Bialetti, que a principios de siglo emigró a Francia, donde trabajó en el mundo del acero, aprendiendo numerosas técnicas, éste cuando regreso a Italia, a su Piamonte natal, decidió abrir en 1919 una industria de modelaje metálico. En 1933 le viene en mente la genial idea que cambió su vida y la de todos los amantes del café. Su intuición consistió en preparar un café usando el vapor del agua hirviendo contenida en una cámara o un contenedor inferior: el vapor del café una vez sale del conducto se condensa y se convierte en el café negro y líquido que a todos nos encanta. El nombre que eligió para este invento fue Moka, nombre en honor de la ciudad Mokha en Yemen, que desde hace siglos es uno de los centros productores de café. De este modo, Bialetti democratizó el concepto del café. Hoy en día en muchos países como Italia y España, el café es un auténtico ritual que hace que las familias y los amigos se reúnan al rededor de la mesa.



Muy diferente como sabor y como idea es la máquina para hacer espresso, creada por Luigi Bezzera en 1901, de la cual hablaremos en otra ocasión. Hoy se puede decir que existen dos escuelas de pensamiento en cuanto al gusto del café se refiere: los hay que adoran el café hecho con la cafetera tipo Moka, que podemos definir como "Bialettianistas", o aquellos que en cambio prefieren el auténtico café espresso, los llamaremos " Bezzerianistas" ( en honor al apellido de su inventor). Podéis elegir el tipo que más os guste, o hacer como nosotros y gozar de ambos!

En interesante saber que muchos pensadores del ochocientos, como Honoré de Balzac, relacionaban el aislamiento de la cafeína, obtenido en 1820, con la nueva, energética, rápida, y frenética sociedad de la segunda mitad del siglo XIX y la actual del siglo XX y XXI, que conocemos bastante bien. Se sabía que el café agitaba, despertaba a las masas. De hecho no está bien exagerar con el café, como todas las cosas hay que tomarlas con medida, a pesar de que tenga beneficios en algunos aspectos de nuestras salud, así que es mejor tomarlo como un pequeño y placentero ritual. Hay que decir, que la moka no fue la primera modalidad doméstica de café, pues ya en el 1819, fue creada en Nápoles la cafetera conocida como napolitana ( con la que se puede conseguir un delicioso café, también hablaremos más adelante, no os preocupéis!. Eso si, con la moka el procedimiento es más inmediato y rápido.



En la actualidad, muchas marcas, como por ejemplo la elegante Alessi, han creado interesantes cafeteras estilísticamente originales, pero la licencia de auténtica es siempre de la industria Bialetti, y sólo ellos pueden
producir la moka octogonal ( contad contad!, las demás cafeteras tienen la base de siete, nueve o diez  lados pero nunca de ocho! o al menos no deberían jaja). También hoy, las cafeteras tipo moka en gran parte se siguen produciendo en Italia. Desde 1933 a 1946 la industria Bialetti produce al rededor de 70 mil cafeteras al año, y desde 1946 en adelante, cuando Alfonso Bialetti dejó la dirección a cargo de su hijo Renato, la producción consigue llegar al millón de piezas al año. Con el boom económico en Italia y en Europa, la cafetera moka se convierte en un símbolo de la " dolce vita", una manera italiana de gozar de los placeres de la vida con simplicidad sin necesidad de renunciar a la elegancia en cada cosa. La célebre campaña del "hombrecito con bigotes" empezó en 1953, y se convierte en un símbolo de la marca Bialetti, reconocible inmediatamente en todo el mundo. El hombrecillo bigotudo representaba al propio Alfonso Bialetti.

Y ahora os damos algunas sugerencias para hacer vuestro café aún mejor con vuestra moka!

- Introducir el agua en el contenedor inferior sin sobrepasar la válvula, si introducís mucha agua, conseguiréis que esta llegue al contenedor del polvo de café, lo que hará que este se humedezca y adense, creando un tapón, lo que hará que el vapor no pueda filtrarse bien.

- Introducir el café molido en el contenedor y escachar ligeramente, sólo ligeramente sino el vapor no podrá pasar. Y esta es una diferencia sustancial entre la cafetera moka y la máquina espresso, pues ésta ultima si necesita de un café molido muy compacto debido a la fuerte presión de vapor con la que funciona la máquina.

- Poner vuestra cafetera al fuego, al poco tiempo ésta iniciará a murmurar y gorgotear. Hecho! el café está listo, verterlo en una tacita y compartirlo si es posible, siempre sabe mejor al rededor de una buena conversación!

- Si veis que el café no ha salido del todo, la causa podría ser que el café se haya humedecido, o que el filtro necesita ser cambiado. Un modo para obtener un poco más de café cuando sucede esto, podemos mojar la base de café con agua fría o sumergirla, inmediatamente la volvemos a poner al fuego y debería salir en su totalidad y con normalidad.
